Pork Fried Rice

Flavorful side dish that can be eaten as a meal, or on the side with your favorite stir fry.

Ingredients & Supplies
- 2 cups refridgerated white rice (preferrably jasmine rice)
- 1 package frozen peas and carrots
- 1 pound bacon
- 1/2 white or yellow onion, diced
- 1 tablespoon minced garlic
- 2-4 tablespoons butter
- Soy sauce
- 1 teaspoon sesame oil
- Ground ginger
- 1 teaspoon oyster sauce (optional)
- 3 eggs, beaten (optional)
Instructions
- Wash the rice and prepare according to instructions on package. Refrigerate rice when done.
- Slice the raw bacon into 1/2 sized pieces. Throw into a wok and fry the bacon until cooked.
- Once bacon is cooked, remove from pan and set aside. Drain all grease from the wok. It's ok of there is a little grease left in the wok.
- Cook the frozen peas and carrots according to the directions on the package.
- If using the egg, cook the eggs in the wok until scrambled.
- Once eggs are fully cooked, add in the onion and garlic and cook for about 1-2 minutes.
- Add butter to wok and let melt. Then add the rice, along with the sesame oil, oyster sauce, a dash of ginger, and enough soy sauce to turn the rice brown.
- Let rice fry in wok for 1-2 minutes, until all ingredients are well combined.
- Add in bacon and about half the bag of cooked veggies (or the full bag if you like more).
Tips & Notes
If you don't have a wok, use a large pan and set the heat to high.
Double the receipe to avoid wasting half the bag of veggies. You will need more bacon if you want there to be enough pork in the dish.
Protein can be swapped with other types of pork, chicken, or shrimp; or you can change it up and make veggie fried rice!
