Collard Greens

A staple at Friendsgiving every year!

Ingredients & Supplies
- 1 pound collard greens, washed and chopped
- 1 pound bacon, diced
- 1/2 onion, diced
- 3-4 cups chicken broth
- 2 tablespoons minced garlic
- 1 tablespoon apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon red pepper flakes
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1 tablespoon Creole seasoning (Tony's)
- 1/2 teaspoon cayenne pepper (optional)
- 1 large pot
Instructions
- Prepare your ingredients first! Slice the onion into small pieces.
- Slice the raw bacon into 1 inch pieces.
- In a large pot, cook the bacon over high heat just before crispy.
- Remove the bacon from pan and set aside. Drain all grease from the pot. It's ok of there is a little grease left in the pot.
- Add the onion and garlic to the pot and cook until translucent.
- Add the collard greens to the pot and stir to combine.
- Add the chicken broth and all seasonings to the pot. Bring to a boil and reduce heat to low.
- Cover and simmer for 60 minutes, stirring occasionally.
Tips & Notes
If you are in a time crunch, you can prepare the collard greens in an instant pot. Cook on the high setting for about 20 minutes.
*Traditional recipe calls for ham hock in place of the bacon.
