Ingredients & Supplies
- 1 bunch cilantro (about 1/2 cup chopped)
- 1 bunch flat-leaf parsley (about 1/4 cup chopped)
- 1 shallot, finely chopped
- 3-4 garlic cloves, minced
- 1 fresno chile or red jalapeño, finely chopped
- 3/4 cup olive oil
- 1/2 cup red wine vinegar
- 1 teaspoon red pepper flakes
- 1 teaspoon ground or chopped oregano
- Salt and pepper to taste
Instructions
- Finely chop all the herbs, onions, and garlic
- In a bowl, combine the chopped ingredients with the olive oil, red wine vinegar, red pepper flakes, oregano, salt, and pepper.
- Mix well until all ingredients are combined.
- Let the chimichurri sit for at least 10 minutes to allow the flavors to marry.
- Store in an airtight container in the refrigerator for up to 1 week.
Tips & Notes
Fresno chiles can be substituted with green jalapeño or other mild chiles.
